
Drunken mezcal with pear and shaved ice
Shaved ice with Boiron pear purée and mezcal.Ingredients
150mlSugar syrup
250mlpear purée
Ice shaver
100mlLemon juice
400mlWater
100gIcing sugar
100gFlour
100gEgg white
Silicone mold pear
100gMelted butter
Lemon juice
Fresh, firm hand pears
Cane sugar
mezcal

Preparation
- Mix the fruit puree with the water, sugar syrup, and lemon juice.
- Freeze in plastic containers.
- Mix the ingredients and spread thinly in the mold.
- Bake for about 8 minutes at 170°C.
- Dust with powdered sugar.
- Peel the pears and cut into thick slices.
- Sear these slices in butter, sprinkle with some cane sugar, and let caramelize.
- Deglaze with a splash of mezcal and a splash of lemon juice.
- Let the pears cool in this liquid.
- Scoop the pears into a cold bowl.
- Shave the ice with the fine blade and spoon on top.
- Garnish with the pear tuile.
