Spicy mango

Shaved ice is the trend. We also call it ‘snow in summer’. In this recipe, we use Boiron mango puree.

Ingredients

400mlWater
Hot honey
Chili stripes
150mlSugar syrup
100mlLemon juice
Ice shaver
Coriander cress
Mango
250mlMango purée

Preparation

  1. Mix mango puree with the water, sugar syrup, and lemon juice.
  2. Freeze in plastic containers.
  3. Cut the mango into cubes, sear in a hot pan, and add some hot honey while frying so the mango caramelizes.
  4. Let cool and place on a well-chilled plate.
  5. Soak some chili strips in warm water and then pat dry.
  6. Shave the ice, spoon it onto the mango.
  7. Garnish with the chili strips and some coriander cress.
