Ingredients
40gAlmond powder
100gMelted butter
stencil spoon
50gwhite flour
175gFine sugar
stencil fork
stencil knife
100gEgg white
600gMilk
50gFine sugar
500gsemi-whipped cream
250gAlmond powder
10gSoaked leaf gelatin
Preparation
- Mix the egg white with the sugar and butter in a bowl.
- Add the flour and almond flour and stir into a batter.
- Let the batter firm up and spread it thinly on a baking mat using the stencils.
- Bake the cutlery for 8 minutes at 175°C.
- Heat a small amount of the milk with the sugar and dissolve the gelatin in it.
- Mix almond flour with this milk.
- Mix the rest of the milk into the mixture using an immersion blender.
- Fold in the semi-whipped cream.
