Crispy baked fish bones flavored with Parmesan cheese. Delicious as an appetizer or as a crunchy topping on a (fish) dish.

Ingredients

20gIcing sugar
44gEgg white
30gMelted butter
salt to taste
66gFlour
10ggrated Parmesan cheese
silicone mold lisca
Bag of squid ink

Preparation

  1. Mix everything except the ink with a whisk until smooth batter forms.
  2. Add just enough ink until the mixture is evenly black.
  3. Spread thinly in the mold using a palette knife.
  4. Bake at 170°C for about 10 minutes.
