Freekeh pokébowl

3Edamame beans
100gFresh salmon fillet, skinless and boneless
Med Cuisine freekeh
Pickled ginger
Lamb's lettuce
0.5Avocado
2Med Cuisine tahini
4Soy sauce
4Lime juice
1Pickled ginger liquid
Preparation
- Wash one cup of freekeh well.
- Cook for 8-10 minutes in salted water until tender. Drain and let cool.
- Cut the salmon fillet into cubes and the avocado into slices.
- Place a base of freekeh in a bowl.
- Arrange the salmon cubes, avocado, edamame beans, lamb's lettuce, and pickled ginger on top.
- For the dressing, whisk together tahini, soy sauce, lime juice, and the liquid from the pickled ginger.
- Taste and adjust the flavor. Add cold water if needed to reach the desired consistency.
- Drizzle with the tahini-ponzu-ginger dressing just before serving.
