
Marbled tuna roll with ginger beer vinaigrette
Marbled tuna roll with a vinaigrette of ginger beer, sesame, and red chili.This dish is part of the Chef's Table during the spring event at HANOS Maastricht on April 18, 2023.
Ingredients
1kgfresh tuna
300gspinach powder
100gGelburger
1Lime
1bottle olive oil
Fleur de sel
3bottles Royal Bliss Ginger Beer
3gXanthan
20groasted sesame seeds with yuzu
1Red chili
10gCoriander
50guchibori sushisu
Salt
1bunch radish
soy sauce/wasabi crumble
Cress

Preparation
- Cut the fresh tuna into long strips about 1 cm wide.
- Mix the spinach powder with the gelburger.
- Place the tuna strips on a tray and sprinkle all sides with the powder mix.
- Roll them tightly in plastic wrap and freeze.
- Remove from the freezer one hour before use and cut into slices about 1 cm wide.
- Let thaw and season with olive oil, fleur de sel, and lime zest, then serve on a plate.
- Combine the ginger beer with the ushibori, salt to taste, and xanthan in a measuring jug and blend well with a hand blender. Then strain through a fine chinois.
- Add finely chopped coriander, very fine red chili brunoise, and sesame seeds to the mixture.
