Herring with cucumber and herring caviar

The Hollandse Nieuwe is back Herring, presented in just a slightly different way.

Ingredients

herring
Cucumber
Sushi su
Crème fraîche
herring caviar

Preparation

  1. Cut the herring into brunoise.
  2. Use the Japanese vegetable slicer to cut thin slices of cucumber.
  3. Place the cucumber slices in the sushi SU for about a minute. Then cut them to the desired size.
  4. Spoon the herring brunoise onto the cucumber slices and roll them up tightly.
  5. Mix a teaspoon of herring caviar with a tablespoon of crème fraîche and season with a little salt. Spoon onto a plate and place the three cucumber and herring rolls on top.
  6. Serve with purple radish and watercress.
