Heart Tartelette

This heart-shaped tartelette is a loving treat, filled with the flavors of raspberries and vanilla.

Ingredients

6gGelatine
60gSugar
30gwater for gelatin
80gWater
35gEgg yolk
75gButter
50garoma paste raspberry compound

100glukewarm water
500gunsweetened cream
100gneutral stock
3gvanilla aroma

Preparation

  1. Mix all ingredients into a shortcrust dough.
  2. Roll out the dough to 3 mm thickness and cut out hearts. Place these hearts upside down on the mold.
  3. Bake for about 10 minutes in a convection oven at 160 degrees.

  1. Soak the gelatin with water (30 grams).
  2. Bring the water, flavor paste, and sugar to a boil.
  3. Add egg and egg yolk and heat to 82 degrees Celsius.
  4. Add the melted gelatin and let cool down to about 40 degrees Celsius, then mix in the butter.

  1. Whip the cream until soft peaks form.
  2. Mix the fond with water and flavoring.
  3. First mix a small portion with the cream, then fold everything together.
  4. Fill the tartelette with the raspberry cremeux.
  5. Finish with a vanilla quenelle and fresh fruit.
