Preparation

  1. Mix the flour and baking powder with the cold milk, egg yolks, and the melted butter.
  2. Whip the egg whites until stiff.
  3. Fold the egg whites into the batter and season with salt.
  4. Fry the pancakes until golden brown in a pan.

  1. Sauté the spinach together with the spring onion.
  2. Add a bit of garlic.
  3. Cook the egg for 75 minutes at 64°C.
  4. Warm the asparagus.
  5. Place the spinach and spring onion on the pancake.
  6. Halve the egg yolk and place it on the spinach.
  7. Fold the sides of the pancake slightly inward.
  8. Place the goat cheese and asparagus on the pancake and serve immediately.
