Hot Sauce caviar

Make your own caviar pearls with the handy Spherificator, using alginate and calcium salt.This caviar maker can easily process any type of liquid into pearls, such as vinaigrette pearls in a salad or mint pearls in a cocktail. The pearls provide a flavor explosion as soon as they burst open in the mouth!

Ingredients

0.5sodium citrate
500mlWater
0.5Sugar
1calcium salt
60mlhot sauce
0.5units.itemsalginate
Spherificator

Preparation

  1. Put the water with sodium citrate in a blender and mix for 20 seconds.
  2. Mix the sugar with the alginate.
  3. Set the blender to the lowest setting and sprinkle the alginate/sugar mixture into the spinning liquid.
  4. Mix until all the powder is dissolved.
  5. Slowly add the hot sauce and keep mixing.
  6. Let rest for 30-45 minutes to allow the air to escape.
  7. Pour through a small sieve into the Spherificator.
  8. Dissolve the calcium salt in 500 ml water by stirring with a spoon for about 30 seconds.
  9. Press the button on the Spherificator and let small drops of the sauce mixture fall into the calcium bath.
  10. Let them sit in the water for 1 minute.
  11. Transfer the pearls to a sieve and rinse under running water.
  12. Let drain briefly and serve!
