Preparation
- Prepare the Big Green Egg as follows: 150°C, convEGGtor, drip pan, stainless steel grid.
- Sprinkle the meat with sea salt and then with the herbs, place the meat indirectly on the Big Green Egg for 2 hours.
- Then wrap it in aluminum foil together with the butter. Let it cook for about 3 hours until a core temperature of 95°C is reached.
