
Crispy cauliflower & celeriac

1Cauliflower
3Egg whites
2Unagi sauce
100gFlour
100gPanko
1Potato starch
1bourguignon herbs
Yogurt
finely chopped canned chipotle peppers
Spring onion
Coriander
sweet and sour red cabbage
Preparation
- Blanch the celeriac and cut into square cubes.
- Blanch the cauliflower and cut into florets.
- Whisk the egg whites with the unagi sauce and marinate the vegetables in this for at least four hours.
- Remove the vegetables from the marinade.
- Bread the vegetables in breadcrumbs and fry until crispy in oil.
- Mix the yogurt, mayonnaise, and finely chopped chipotle peppers.
- Serve the cauliflower and celeriac with tonkatsu sauce, homemade sauce, and garnish with spring onion, coriander, and sweet and sour red cabbage.
