Masala Papad

A fresh salad served on a 'papad'. Recipe by Paulami Joshi. Serves 4.Masala literally means 'spice mix'; in this dish, the fresh salad is served on the 'papad': a fried, crispy pappadum.

Ingredients

1Tomato, finely chopped
1Onion, finely chopped
0.5Salt
0.5Cumin powder
1Cucumber, finely chopped
10gCoriander, finely chopped (optional)
2Lemon juice
150gPomegranate seeds
Sunflower oil
8pappadums

Preparation

  1. Mix onion, tomato, cucumber, coriander, pomegranate seeds, salt, cumin powder, and lemon juice and let the flavors meld for at least 5 minutes.
  2. Heat sunflower oil in a deep fryer to 180°C.
  3. Fry the papadums for a few minutes.
  4. Drape the salad over the papadums and serve immediately.
