Melon caviar

Make your own caviar pearls with the handy Spherificator, using alginate and calcium salt.This caviar maker can easily process any type of liquid into pearl form, such as vinaigrette pearls in salad or mint pearls in a cocktail. The pearls provide a flavor explosion as soon as they burst open in the mouth!

Ingredients

4Sugar
1units.itemsCantaloupe melon
500mlWater
0.5alginate
1calcium salt
Spherificator

Preparation

  1. Peel the melon and cut into pieces. Put the melon in a blender and blend until a homogeneous mass is formed.
  2. Strain through a sieve and then put 250 ml of the mixture back into the blender.
  3. Mix the sugar with the alginate.
  4. Set the blender to the lowest speed and sprinkle the alginate/sugar mixture into the spinning liquid.
  5. Mix until all the powder is dissolved.
  6. Let rest for 30-45 minutes to allow the air to escape.
  7. Pour through a small sieve into the Spherificator.
  8. Dissolve the calcium salt in 500 ml of water by stirring with a spoon for about 30 seconds.
  9. Press the button on the Spherificator and let small balls of the melon mixture fall into the calcium salt bath.
  10. Let them sit in the water for 1 minute.
  11. Transfer the pearls to a sieve and rinse them under running water.
  12. Let drain briefly and serve!
