Preparation
- Mix the mango puree with the chipotle tabasco and heat before service.
- Heat the desired amount of glaze.
- Season the bavette with the Tangy Chipotle mix.
- Grill the bavette to about 52°C core temperature on a barbecue or grill pan, let rest for about 4 minutes, and slice for service.
- Warm or steam the tacos for a few minutes.
- Warm the tacos.
- Fill the tacos with sugarloaf lettuce, sliced bavette, and yellow tomatoes.
- Drizzle the warm mango sauce and veal glaze over the tacos and serve with fresh lime.
