Salmon with white ponzu & spicy mayonnaise

Kewpie
Ponzu
Nori wasabi chips

Ama Soyu
Harinori
Blowtorch

Preparation

  1. Mix Kewpie with Tabasco to taste and put this in a piping bag.
  2. Make a bath of white ponzu and add the diced salmon.
  3. Let the salmon marinate (cook) for about 5 minutes.
  4. Pat the salmon dry and brush with Ama Soyu.
  5. Briefly torch the salmon with a blowtorch.

  1. Place the salmon cubes on a wasabi chip.
  2. Top with the Kewpie wasabi mayonnaise.
  3. Place a piece of harinori on top.
