This refined mini donut has a soft filling of creamy passion fruit chocolate, offering a perfect balance between sweet and slightly sour.Pre-desserts, also known as dessert amuses, are small tasty creations that introduce the dessert in a festive way. Ingredients

100gSifted flour
200gWhole milk
100gButter
150gWhole egg
Passion fruit chocolate callets

Fine granulated sugar
Passion fruit powder

Preparation

  1. Heat the milk with the butter until the butter is completely melted.
  2. Add the flour while stirring until a dough ball forms that comes away from the edge.
  3. Put the dough in the bowl of a KitchenAid and let it cool slightly.
  4. Then gradually beat in the egg with a whisk in the machine.
  5. Pour the mixture into silicone half-sphere molds and press a piece of passion fruit chocolate into the center halfway through.
  6. Fill the mold further and freeze.

  1. Mix the fruit powder into the sugar to taste.
  2. Fry the donuts straight from the freezer in oil at 180°C. As soon as they float, they are done.
  3. Roll the donuts in the sugar mixture and serve them warm so the chocolate inside is melted.
