Hollowed lime filled with lime and lemon sorbet and mojito mousse

Ingredients

Limes

200gCane sugar
8units.itemsMint sprigs
100gWhite rum
Zest of 2 limes
400gWater
100gLime juice

400gQimiQ whip pastry cream
80gIcing sugar
250mlMojito infusion
150mlLightly whipped cream

Lime and lemon sorbet
Mint leaf

Preparation

  1. Halve the limes and remove the pulp.
  2. Squeeze out the juice and save it for later use.

  1. Heat the sugar with the lime peels until the sugar is melted, without letting it caramelize darkly.
  2. Add the rum and ignite to let the alcohol evaporate.
  3. Add the water, lime juice, and mint and mix everything well.
  4. Let the infusion steep for at least 12 hours (preferably vacuum-sealed). Then strain the infusion.

  1. Mix the QimiQ with the mojito infusion and powdered sugar in a food processor until smooth.
  2. Then whisk the mixture until airy and gently fold in the semi-whipped cream.

  1. Place a scoop of lime and lemon sorbet at the bottom of the hollowed-out lime.
  2. Pipe the mojito mousse on top.
  3. Garnish with a small mint leaf.
