Zest of 2 limes
400gWater
100gLime juice
400gQimiQ whip pastry cream
80gIcing sugar
250mlMojito infusion
150mlLightly whipped cream

Preparation
- Halve the limes and remove the pulp.
- Squeeze out the juice and save it for later use.
- Heat the sugar with the lime peels until the sugar is melted, without letting it caramelize darkly.
- Add the rum and ignite to let the alcohol evaporate.
- Add the water, lime juice, and mint and mix everything well.
- Let the infusion steep for at least 12 hours (preferably vacuum-sealed). Then strain the infusion.
- Mix the QimiQ with the mojito infusion and powdered sugar in a food processor until smooth.
- Then whisk the mixture until airy and gently fold in the semi-whipped cream.
- Place a scoop of lime and lemon sorbet at the bottom of the hollowed-out lime.
- Pipe the mojito mousse on top.
- Garnish with a small mint leaf.
