Vega Pasta Bolognese

Pulled Oats® or the plant-based alternative to meat. This meat substitute is made from just five ingredients (!): oats, fava beans, peas, and a bit of oil and salt.

The product has a nice bite and is neutral in flavor; this allows every chef to give it their own twist! This versatile meat substitute is delicious both cold and warm, for example in wraps, as an addition to a burrito bowl, for making a vegetarian Bolognese sauce, or great for stir-frying!

50gGarlic
1500gPulled Oats
3kgTomato
500gTomato paste
3kgsieved tomatoes
5chili peppers
Oil
Salt
Sugar
Black pepper
Parmesan cheese (finely grated)
Fresh basil
tagliatelle

Preparation

  1. Finely chop the onion, garlic, chili pepper, and tomatoes.
  2. Heat some oil in a large heavy-bottomed pan over medium heat.
  3. Add the onion, garlic, and chili and sauté for a few minutes, or until golden brown.
  4. Then add the tomato paste, finely chopped and sieved tomatoes.
  5. Let it simmer on low heat for 10-15 minutes with the lid on the pan.
  6. Season with salt, sugar, and pepper.
  7. Add Pulled Oats and let it simmer briefly.
  8. Cook the tagliatelle in salted boiling water according to the instructions on the package.
  9. Serve with grated Parmesan cheese and fresh basil, as desired!
