Pear carpaccio

The pears are thinly sliced on the mandoline, vacuum-sealed and infused with sushi vinegar.Cinnamon cashews add a warm accent, while mustard caviar and a spicy mango sauce provide a kick. The whole is finished with gorgonzola and a touch of honey.

Ingredients

Sushi vinegar
Gorgonzola
Pears
Cinnamon cashews
Mustard caviar
Spicy mango sauce
Honey

Preparation

  1. Slice the pears very thinly on a mandoline.
  2. Vacuum the pear slices and infuse with sushi vinegar.
  3. Pipe dots of spicy mango sauce on the carpaccio.
  4. Garnish with small pieces of gorgonzola, cinnamon cashews, mustard caviar, cress, and some honey.
