Beef shortrib 'Pastrami style' with chimichurri

Beef shortrib, chimichurri, pea cream, spicy tomato, crispy onions, and sweet potato.This recipe will be presented during the Chef's Table Daily Fresh Food at the Horeca Event at HANOS Apeldoorn on September 26, 2023.

Ingredients

1Beef short rib pastrami style
80gpea cream with rosemary
1Crispy onions
30gsweet potato chips
0.125Tray of purple shiso
1Chimichurri

Preparation

  1. Place the shortrib on a tray in a hot oven at 180°C for 15 minutes.
  2. Heat the pea cream in the steamer at 80°C for 30 minutes or put in a piping bag and warm up.
  3. Mix the chimichurri with olive oil and a splash of sushi vinegar. Stir until it becomes a runny sauce.
  4. Arrange everything playfully together on the plate.
