Smokey octopus

Smokey sous-vide cooked octopus. Full barbecue flavor!

Ingredients

sous vide cooked octopus
kimchi base sauce
Japanese mayonnaise
Smoke oil
Smoked almonds
smoked sriracha sauce

Preparation

  1. Halve (lengthwise) the cooked octopus.
  2. Mix some smoked oil into the kimchi base until it becomes a 'lacquer'.
  3. Brush the octopus all around with this (or vacuum seal with the lacquer).
  4. Before serving, briefly grill the octopus on the barbecue or with a blowtorch.
  5. For the sauce, mix some sriracha into the Japanese mayonnaise to taste and garnish the octopus with it.
  6. Garnish with halved smoked almonds.
