
Smokey octopus
Smokey sous-vide cooked octopus. Full barbecue flavor!Ingredients
sous vide cooked octopus
kimchi base sauce
Japanese mayonnaise
Smoke oil
Smoked almonds
smoked sriracha sauce
Preparation
- Halve (lengthwise) the cooked octopus.
- Mix some smoked oil into the kimchi base until it becomes a 'lacquer'.
- Brush the octopus all around with this (or vacuum seal with the lacquer).
- Before serving, briefly grill the octopus on the barbecue or with a blowtorch.
- For the sauce, mix some sriracha into the Japanese mayonnaise to taste and garnish the octopus with it.
- Garnish with halved smoked almonds.
