
Tataki Donburi
Rice dish with seared salmon.Ingredients
Sushi vinegar
fresh salmon without skin
pickled daikon
Furikake salmon
seafood soy sauce
yuzu ponzu sauce
Sushi rice
Preparation
- Rinse the rice well and cook it in a rice cooker.
- Season the rice with sushi vinegar and furikake.
- Mix the seafood soy sauce with yuzu ponzu (2/3 seafood, 1/3 ponzu).
- Place the salmon in this marinade (about 30 minutes).
- Slice the daikon into thin slices (mandoline).
- Remove the salmon from the marinade, pat dry, and sear all around with a blowtorch (it can remain pink inside).
- Brush the daikon slices with the marinade and briefly sear as well.
- Serve the rice lukewarm with the salmon and daikon.
