Tataki Donburi

Rice dish with seared salmon.

Ingredients

Sushi vinegar
fresh salmon without skin
pickled daikon
Furikake salmon
seafood soy sauce
yuzu ponzu sauce
Sushi rice

Preparation

  1. Rinse the rice well and cook it in a rice cooker.
  2. Season the rice with sushi vinegar and furikake.
  3. Mix the seafood soy sauce with yuzu ponzu (2/3 seafood, 1/3 ponzu).
  4. Place the salmon in this marinade (about 30 minutes).
  5. Slice the daikon into thin slices (mandoline).
  6. Remove the salmon from the marinade, pat dry, and sear all around with a blowtorch (it can remain pink inside).
  7. Brush the daikon slices with the marinade and briefly sear as well.
  8. Serve the rice lukewarm with the salmon and daikon.
