
Spoonable liquid mango
Silky smooth liquid mango that stays firm but melts in warm weather, perfect in any form.Ingredients
300gmango purée (Boiron)
Sugar syrup
3Gelatin sheets
1lWater
4.5gGluco
5gAlgin
Preparation
- Season 300 grams mango purée with sugar syrup.
- Add 4.5 grams gluco.
- Soak 3 sheets of gelatin in water.
- Warm the mango mixture and dissolve the gelatin in it.
- Pour onto a tray and let set.
- Mix 1 liter water with 5 grams algin and let rest.
- Cut out shapes from the mango mixture (use cutters for hearts, letters, stars, etc.).
- Let the mixture form into spheres.
- Before serving, place the shapes in hot water so the gelatin dissolves and the inside becomes liquid again.
- Serve immediately.
