Spoonable liquid mango

Silky smooth liquid mango that stays firm but melts in warm weather, perfect in any form.

Ingredients

300gmango purée (Boiron)
Sugar syrup
3Gelatin sheets
1lWater
4.5gGluco
5gAlgin

Preparation

  1. Season 300 grams mango purée with sugar syrup.
  2. Add 4.5 grams gluco.
  3. Soak 3 sheets of gelatin in water.
  4. Warm the mango mixture and dissolve the gelatin in it.
  5. Pour onto a tray and let set.
  6. Mix 1 liter water with 5 grams algin and let rest.
  7. Cut out shapes from the mango mixture (use cutters for hearts, letters, stars, etc.).
  8. Let the mixture form into spheres.
  9. Before serving, place the shapes in hot water so the gelatin dissolves and the inside becomes liquid again.
  10. Serve immediately.
