Preparation

  1. Clean the meat before use and then vacuum seal it with a splash of olive oil.
  2. Cook sous-vide at 52°C for 20 minutes.
  3. Sear all sides until brown and roll in the finely ground chipotle.
  4. Puree all the beans (including the liquid) together with the miso to the desired thickness. This bean paste yields about 75 portions.
  5. Grill the a-maize-ing ribs until lightly browned.
  6. Fry the Flammes Frites and season with Fajita Spice mix.
