Taco with pork tenderloin, harissa and bell pepper

Tacos filled with pork tenderloin and bell pepper salad. Approximate cost per person: €1.56.Pork tenderloin is more versatile than just for satay. The pieces of meat are served in a taco with bell pepper salad and harissa yogurt.

Ingredients

160gPork tenderloin
5gtaco seasoning

50gRoasted bell pepper
10gSmoked almonds

100mlGreek yogurt
20gHarissa paste
4gSalt

Preparation

  1. Season the pork tenderloin with taco spices.
  2. Sear the meat on all sides and cook to a core temperature of 65°C.
  3. Let the meat rest and slice thinly.

  1. Rinse the bell pepper with cold water and remove any blackened skin.
  2. Cut the bell pepper and little gem into thin strips.
  3. Roughly chop the smoked almonds.
  4. Mix everything together and season with olive oil and salt.

  1. Mix the yogurt with the harissa paste.

  1. Cut out the tortilla with a large cutter. Briefly toast in a dry pan on both sides.
  2. Fill the taco with the salad.
  3. Place the slices of meat on the salad and top with the harissa yogurt.
