
Carpaccio to share
Combined with a basil cream, roasted honey-pumpkin seeds, and risotto 'bitterballen'. Fun as a starter for 2 people.Ingredients
190gbasil oil
50gEgg white
Salt
50gFull-fat yogurt
Pepper
Pecorino
200gsirloin steak
2Risotto croquettes tomato & mozzarella
Roasted honey pumpkin seeds
Preparation
- Blend the egg white with the yogurt using a hand blender.
- While blending, add the basil oil until you have a nice emulsion.
- Season with salt.
- Slice the steak into thin slices, flatten them between plastic wrap, and place on a plate.
- Season with pepper.
- Pipe the cream over the carpaccio.
- Fry the risotto balls and cut them in half.
- Generously grate Pecorino on each half.
- Place the risotto balls on the carpaccio and finally sprinkle the roasted pumpkin seeds over the top.
