Carpaccio to share

Combined with a basil cream, roasted honey-pumpkin seeds, and risotto 'bitterballen'. Fun as a starter for 2 people.

Ingredients

190gbasil oil
50gEgg white
Salt
50gFull-fat yogurt

Pepper
Pecorino
200gsirloin steak
2Risotto croquettes tomato & mozzarella
Roasted honey pumpkin seeds

Preparation

  1. Blend the egg white with the yogurt using a hand blender.
  2. While blending, add the basil oil until you have a nice emulsion.
  3. Season with salt.

  1. Slice the steak into thin slices, flatten them between plastic wrap, and place on a plate.
  2. Season with pepper.
  3. Pipe the cream over the carpaccio.
  4. Fry the risotto balls and cut them in half.
  5. Generously grate Pecorino on each half.
  6. Place the risotto balls on the carpaccio and finally sprinkle the roasted pumpkin seeds over the top.
