Preparation
- Heat sugar, water, and glucose until a nice caramel forms.
- Then deglaze with the warmed cream and cook to 103°C.
- Make a ganache from melted chocolate and peanut praline.
- When the ganache is at 38°C, add diced butter and fleur de sel.
- Emulsify using a hand blender.
- Serve the 'peanut sauce' with the chocolate fries.
- Heat the cream with lemon juice, lemon zest, and yogurt powder.
- Make a ganache from the melted chocolate and the lemon mixture.
- Let the mixture cool and blend with the oil using a hand blender until it becomes a mayonnaise.
- To make 'ketchup', use a good strawberry jam.
- Flavour this with vinegar and red pepper in a ratio of 1000 grams of jam - 5 grams of pepper - 75 grams of vinegar.
- Mix well and serve with the chocolate fries.
