8salted anchovies
Preparation
- Vacuum the romanesco and cook sous-vide in a water bath or in the combi steamer at 85°C for 1 hour.
- Blend the warm romanesco finely in a blender and add the cooking cream and anchovies.
- Pass the cream through a fine sieve and season with salt if desired.
- Plate on the dishes.
