700gRomanesco
500mlDebic Cooking Cream 20% Original
optional: salt to taste
8salted anchovies

Preparation

  1. Vacuum the romanesco and cook sous-vide in a water bath or in the combi steamer at 85°C for 1 hour.
  2. Blend the warm romanesco finely in a blender and add the cooking cream and anchovies.
  3. Pass the cream through a fine sieve and season with salt if desired.
  4. Plate on the dishes.
