
Edible Piña Colada cocktail with pineapple, coconut, and kaffir lime
Based on the classic Piña Colada cocktail with pineapple, coconut, and a touch of kaffir lime. The approximate cost per person is €2.35.The pineapple is briefly fried in butter until it is brown and the sugars are caramelized. The pineapple is deglazed with Piña Colada. Vacuum seal and let it marinate for at least 1 day. Tropical is allowed in summer, so garnish the pineapple with toasted coconut chips and grated kaffir lime zest.

Preparation
- Clean the pineapple and sear it in a frying pan.
- Deglaze the pineapple with the Piña Colada.
- Vacuum seal the pineapple together with the deglazing liquid and let it infuse for 1 day.
- Cut the pineapple into nice pieces, discarding the core.
- Place the pineapple pieces on a nice plate and sprinkle with coconut chips.
- Grate half of the kaffir lime over the dish and drizzle extra with the liquid from the vacuum bag.
