Marinated nectarine with sea buckthorn ice pastille and browned almonds. The approximate cost price per person is €1.54.The nectarine is a wonderful summer product and delicious in desserts. The nectarine pieces are marinated in powdered sugar, lime juice, lime zest, and mint leaves. These are served with ice pastilles made from sea buckthorn puree, sugar water, and xanthan, accompanied by browned almonds.

Preparation
- Peel the nectarines and cut them into cubes.
- Mix the nectarine cubes with some powdered sugar, the zest and juice of a lime, and finely chopped mint leaves.
- Let this marinate for at least 1 hour.
- Mix the sugar water with the sea buckthorn purée and xanthan using a hand blender.
- Strain the mixture through a fine sieve and let it rest in the refrigerator for 24 hours.
- Pour the mixture into molds and store them in the freezer.
- Brown the almonds for 15 minutes in the oven at 150°C.
- Roughly chop the nuts.
