Preparation
- Clean a medium-sized onion at the root end, only removing the root base (do not cut off the bottom).
- Remove the thin, outer layer.
- Press the apple and pear slicer onto the onion and push down, but not all the way through. Remove the slicer from the onion.
- Now cut each segment again, so you have 20 segments.
- Carefully remove the central part.
- Blanch the onion for 1 minute and cool in ice water.
- Mix 1 deciliter of milk with 1 egg.
- Season white flour with Madras curry.
- Dip the onion in the milk, pat dry, and coat well in the flour (also between the segments).
- Then dip again in the milk and coat once more in the flour.
- Deep-fry in oil until crispy.
