Preparation
- Cut the herring into neat, even pieces like the rye bread.
- Mix the sheep's yogurt and cream cheese with chopped chives.
- Season the cream with salt and pepper.
- Put the cream in a piping bag.
- Spread the cream generously on the rye bread.
- Place the herring on top.
- Place the thinly sliced pickles and pieces of chopped Amsterdam onions on the herring.
- Garnish the herring with the pearls, radishes, and daikon.
Tip: briefly place the radish and daikon in ice water, this will make them curl nicely and become deliciously crisp.
