Herring, smoked beets and samphire

Salty herring combined with smoked beets and crispy samphire creates a distinctive and elegant dish full of earthy and briny notes.

Recipe for 4 people.

Ingredients

4herrings
1units.itemsSpring onion
1Picudo olive oil
1Snack cucumber
1Crème fraîche
2units.itemsSmoked beets
Sushi vinegar

Preparation

  1. Blanch the samphire briefly.
  2. Cut the herring in half, place the piece with the tail on the plate.
  3. Cut the other part of the herring into a coarse brunoise, drizzle with a little picudo olive oil, and mix with finely chopped spring onion.
  4. Slice the snack cucumber thinly and drizzle with sushi vinegar.
  5. Place next to the tail, pipe a little crème fraîche in between, add some sliced smoked beets, a few sprigs of samphire, and some thin slices of marinated cucumber.
