
Herring, smoked beets and samphire

1Snack cucumber
1Crème fraîche

Preparation
- Blanch the samphire briefly.
- Cut the herring in half, place the piece with the tail on the plate.
- Cut the other part of the herring into a coarse brunoise, drizzle with a little picudo olive oil, and mix with finely chopped spring onion.
- Slice the snack cucumber thinly and drizzle with sushi vinegar.
- Place next to the tail, pipe a little crème fraîche in between, add some sliced smoked beets, a few sprigs of samphire, and some thin slices of marinated cucumber.
