Veal jus with truffle

We work with xanthan. This is ideal if you don't want to reduce the jus any further, as the flavor would become too strong.

Ingredients

Veal jus
xantana (Texturas)

Preparation

  1. First make a veal jus.
  2. Then thicken it with a bit of xantana, so the jus stays nicely on the plate and doesn't run off anymore.
