
Crispy egg with capers

Panko
Egg white
Capers
Eggs
Preparation
- Rinse the capers clean under the tap.
- Pat dry and let dry in the oven at 100°C until completely dry.
- Blend them with panko in the food processor until a fine powder (the amount of capers relative to the panko is to taste).
- Boil fresh eggs for 3 minutes, cool quickly, and peel.
- Chill well.
- Whisk egg white and dip the eggs in it.
- Bread in the panko/caper mixture.
- Fry crispy in oil.
