Preparation
- Finely chop the onion, press the garlic, and dice the carrot and celery.
- Melt the butter in a casserole.
- Sauté the onion, carrot, celery, and garlic for about 3 minutes.
- Add the stewing meat and brown it on all sides.
- Pour the Brand Dubbelbock along the edge of the pan.
- Cut the ontbijtkoek into cubes.
- Add the game stock, sage, and ontbijtkoek, and bring to a boil.
- Lower the heat and gently braise the meat for about 2-3 hours until tender.
- Serving tip: also delicious as a filling for a game stew pastry.
