Mayonnaise with ras el hanout

Ingredients

100gEgg white
200gYogurt
1Ras el Hanout
6Oil

Preparation

Step 2

  1. Put the ras el hanout in a vacuum bag.
  2. Pour in the oil and vacuum seal.
  3. Heat in a water bath for 40 minutes at 70°C. Cool quickly.
  4. Briefly blend the egg white with the yogurt in a powerful blender.
  5. Add the oil drop by drop.
  6. Season the mayonnaise with salt and pepper.
