Peruvian sweet potato soup

Ingredients

1Red bell pepper
150gTruffle potatoes
1Tray of Ghoa cress
1gChili flakes
1Yellow bell pepper
200gKnorr Professional Peruvian sweet potato soup

Preparation

  1. Bring two liters of water to a boil and, while stirring, add the soup powder.
  2. Let the soup simmer gently for 5 minutes.
  3. Peel the bell peppers, cut into brunoise, and blanch.
  4. Wash the truffle potatoes (or perupas) and slice them thinly on a mandoline. Fry them separately at 160°C until crispy.
  5. Divide the bell pepper into bowls and ladle the soup over it.
  6. Finish with the potato chips, Ghoa cress, and chili flakes.
