30gpotato starch
Preparation
- Carefully mix the binding agent with the potato gratin.
- Line a 1/2 gastronorm tray with baking paper.
- Smooth the gratin in the gastronorm tray.
- Bake the gratin in the combi oven at 200°C for 15 minutes.
- Store chilled overnight.
- Turn the gratin out onto a cutting board.
- Then cut the gratin into the desired shape or size.
- Optionally sprinkle with grated cheese and briefly gratinate.
