Two hearts for each other

Two hearts in one dessert, wonderful to share with your loved one. Heart of parfait with raspberry, heart of white chocolate cream, yogurt and red fruit crumble, and cocktail ice pop.

Ingredients

Raspberry powder
300gRaspberry purée
Silicone mold heart
1lDebic parfait

310gMilk
575gWhite chocolate
8gGelatin powder
40gWater
Silicone mold heart
625gCream
15gglucose syrup

Red coloring
Raspberry powder
Sweet tuille mix
Silicone mold 'me & you'

Silicone mold (sphere-shaped)
Passion fruit martini popsicle

Yogurt crumble
Red fruit crumble

Preparation

  1. Whip the parfait until airy in the machine with a whisk.
  2. Then fold in the raspberry purée.
  3. Pipe into the silicone mold and freeze.
  4. Before serving, remove from the mold and dust with some raspberry powder.

  1. Mix the water with the gelatin powder.
  2. Heat the milk together with the glucose syrup and dissolve the gelatin mass in it.
  3. Melt the chocolate and pour the warm mixture over it.
  4. Emulsify with a hand blender until smooth.
  5. Add the cream and mix well.
  6. Pour the mixture into the silicone mold and freeze to unmold.
  7. Let thaw before serving.

  1. Mix the blend according to the instructions on the packaging with water and oil.
  2. Add a drop of red food coloring and mix well.
  3. Spread the mixture thinly in the mold.
  4. Bake at 160°C for about 8 minutes.
  5. After baking, lightly dust with raspberry powder.

  1. Pour the liquid contents into silicone molds (round shape) and freeze.
  2. Unmold and serve frozen as cocktail ice pops.

  1. Mix the crumbles 1 to 1.
  2. Spoon this into a deep plate.
  3. Place both hearts (parfait frozen, the cream thawed) on the crumble.
  4. Add some scoops of sorbet around and place the tuille (to break) on the plate.
