Avocado 'olives'

We make these look-alike olives based on an avocado cheesecake. Delicious as a snack before dessert or with coffee.

Recipe for about 100 olives. Salud makes avocado products with the best Hass avocados in the world, sourced from Michoacán in Mexico.

Ingredients

700gPlain cream cheese
200gSugar
50grantcho syrup
5gEgg yolks
5units.itemsEggs
60gavocado pulp
silicone olive mold
mycryo cocoa butter
smoked salt flakes

Preparation

  1. Put all the ingredients for the cheesecake in a food processor and blend until smooth.
  2. Pipe the mixture into the silicone olive mold.
  3. Place in the oven at 100% steam at 82˚C for 25 minutes (note: cover the mold with butcher's foil to prevent moisture from entering).
  4. Let cool and freeze.
  5. Melt the mycryo cocoa butter over low heat.
  6. Remove the frozen olives from the mold, skewer them on a satay stick, and dip once into the melted cocoa butter.
  7. Let thaw before serving.
  8. Before serving, place a 'flake' of smoked salt on the 'olive'.
