
Croissant bun with vanilla ice cream
A croissant bun filled with red fruit and vanilla ice cream.Inspired by the 'brioche con gelato' from Sicily, 'ice on the bun' is the trend for this summer.
Ingredients
croissant buns
580gfruit filling
fresh red fruit
vanilla ice cream
advocaat topping
Meringue
Lemon balm
powdered sugar or decorative snow
Preparation
Step 1
- Let the croissant bun thaw.
- Bake the bun in the oven at 200°C for 17 to 19 minutes and let cool.
- Mix fruit filling with fresh red fruits such as strawberries, red currants, and raspberries. Ratios to taste and preference.
- Cut open the bun.
- Scoop a ball of vanilla ice cream on top.
- Pipe the advocaat topping over it.
- Put the meringue in a bag and crush into pieces.
- Garnish with the broken meringue, lemon balm, and powdered sugar. Tip: use decorative snow, it doesn't melt.
