
Steamed squid (tubes)
Your guest will be amazed by the texture of this squid dish.Ingredients
squid tubes
Salt
Silicone mat
Blowtorch
Balsamic pearls
Olive oil
Preparation
- Cut the squid tubes into pieces and blend them smooth in the food processor.
- Grease silicone mats with olive oil and roll out the resulting paste between the mats to a sheet about 2 mm thick. Cut into the desired shape and steam for 5 minutes at 65°C.
- For service, briefly go over with a crème brûlée torch and season with salt.
- Serve, for example, with balsamic pearls and a lemon crisp.
