Steamed squid (tubes)

Your guest will be amazed by the texture of this squid dish.

Ingredients

squid tubes
Salt
Silicone mat
Blowtorch
Balsamic pearls
Olive oil

Preparation

  1. Cut the squid tubes into pieces and blend them smooth in the food processor.
  2. Grease silicone mats with olive oil and roll out the resulting paste between the mats to a sheet about 2 mm thick. Cut into the desired shape and steam for 5 minutes at 65°C.
  3. For service, briefly go over with a crème brûlée torch and season with salt.
  4. Serve, for example, with balsamic pearls and a lemon crisp.
