Preparation

  1. Heat the chicken tenders for 4 minutes in a preheated oven at 180°C and immediately glaze them with the marinade afterwards.

  1. Remove the artichoke from the can and place it in sweet and sour brine.

  1. Peel the grapefruit and divide into segments.

  1. Mix all the ingredients except the olive oil with a hand blender.
  2. Slowly add the olive oil until it emulsifies.

  1. Arrange the little gem on the plate.
  2. Place the artichoke, grapefruit, and warm chicken on top.
  3. Finish with fresh herbs (chervil, dill, and celery).
  4. Dress with the citrus vinaigrette.
